Breeding with Kappa and Beta casein

Protein in milk are divided in two groups, whey and casein. Casein is divided in alfa, beta and kappa. Beta casein occurs as A1 or A2, A2 milk is easier to digest for the human body than A1 milk. That's why A2 milk is more healthy and getting more popular.

Kappa casein is important with making cheese, a cow can have AB, BB or AA. BB provides coagulation 25% faster than AA milk, AB milk is in between. AI Total has a couple of bulls who are A/2A and BB:
